There are dynamic texts for sms, gmail and missed phone calls. Anything beyond this is unsupported, and will never be supported unfortunately. I believe this is not the job of the launcher and existing widgets are much better for this task. I can’t recommend one though, as for myself I prefer to use the notification in the status bar.
Using Zooper and Tasker you can get the Notification counts of all of them apps (aslong as they put a notification in the statusbar) See the share your screens section for my lockscreen you will see i had whatsapp notifications set up.

That’s seriously busy! So far as I know there isn’t a way to add notification counts to lightning. I’d be happy to be proven wrong.
For widgets, about the only ones you’ll see used in here are zooper and uccw. 🙂
