I would like to create a shortcut to send a sms/mms to a group I’ve created in my contacts. I know I can create a shortcut to send a message to a single contact, but I was hoping there was a way to have it send to a pre-made group or at least have an option to select the contacts it sends to

That depends on the app that allows you to make the shortcut. Normally those shortcuts you mention are from the sms app.
