Is it possible to select multiple icons with a panel or folder and update their properties all at once? e.g. setting reflection, scale, etc?

You can’t afaik but you can copy all the settings from one item to another.

To change all icons styles in folder, desktop, app drawer or panel: at first go to edit mode by selecting one icon to edit, long press on icon -customize it. Box with customization shows and your icon is selected (gray thin frame around it) tap on any free space to deselect icon, now you can change style for all icons you see no need to copy style to every item! So easy

You can try to use bindings:
Set a binding for a specific property in all concerned items which refers to a specific variable.
Then set the value of that variable through script or using the action “set a variable”.
