Is there a way to undo (unapply) a script?
Not knowing what I was doing I applied the zoom scrolling script to my desktop and f’d it up.

No, sorry. Next time you can quickly force close the launcher. Sometimes (not always) changes are not yet saved in memory and they will revert.
But in this case…ejem, now you have a scrolling desktop U^_^
(That’s exactly why I said to use it on a panel)
