Is there a way to create your own folder style, and have it affect icon display (or hiding), text size and justification for items in the folder? I can’t seem to find how to define these things in the folder settings.

Yes, simply enter edit mode and, change those properties while no item is selected
The properties editor behaves like this:
Item selected? Properties of that item
No item selected? Default properties of all items in that container.
In the editor it says the item/container you are currently editing
