I’m trying to find two settings.. The first one is to remove the grey background from the folders. The second is the folders to grid icons rather than fan ones.
I know I should be able to change it but I can’t find where lol.

Background color:
With folder open, select Folder Settings in menu (or while in edit mode, long press folder icon, and get Folder Settings) then look under Current folder window for background color.
To change the icon:
in edit mode, long press folder icon and select customize item, then more… and go to the icon tab.

Wait you mean the grey background of the icon I guess? Same place as icon settings from the second one above. Icon style… tap Icon, that removes the background, then select grid (seems like you might have to go back out and back into settings in between those two actions).
From your screen shot, Stack is the style selected currently.

varyd rizza long press panel, select customize item, then select More.. and go to the box tab. Long press Border segment on the box diagram so that ONLY the border segments are highlighted. Below select width and or color.
